Reaper Miniatures does some very nice beasties designed to be used with 28mm but as they are monsters they can be adapted to 54mm. A very pretty lady sphinx is made by them. I have been meaning to paint her.
A more expensive option for hydras are similar such kit creatures made by Games Workshop for the Dark Elf armies.
I also have a Japanese character monster which looks like a hydra but I added extra necks and heads from the spare ones in the GW kits.

There is a "minotaur" in one of the D&D or Pathfinder releases, possibly the most recent. It's not called a minotaur, of course, but it looks like one. Apparently it is a "Goristo". The problem is that it is a "huge" monster and so may be 6" tall. So, how big is your minotaur?

Reaper's latest Bones V fundraiser has a whole section on Greek Myth. Not available until next year at the earliest but they are still taking orders until December of this year. There is a huge Cerebus for example.
